Rick Stein is in Bordeaux for a culinary long weekend in search of food excellence and brilliant recipes as he heads to the wineries, markets, cafes, bars and restaurants of the French city. He arrives just in time for ceps and the judging of a local wine contest and takes a trip to the coast to discover its abundance of mussels and oysters.
Back in his Padstow kitchen he recreates three classic dishes from Bordeaux: steak frites with bordelaise sauce, chicken parmentier and mussels with bayonne ham and fines herbes.
